Curried Tofu Scramble – an easy, inexpensive, vegetarian brunch dish

IMG_0938Weather you celebrate the holiday or not, most people have a day to rest and clean up after Christmas. In the UK and other parts of the globe, they call it Boxing Day. Chances are you’re not all that hungry when you awake the morning after all the eating and merry making you did the day and entire week before. Perhaps you’re now ready to start thinking about the coming new year and setting new goals, dreams and resolutions you might be making for your future. Often we imagine detoxing and starting the year off positively and healthfully. A good way to get on the road is by having a healthy breakfast. An easy to prepare, healthy, delicious, inexpensive and vegetarian brunch dish is my Curried Green Tofu Scramble. 

 

Curried Green Tofu Scramble

2 Tablespoon minced garlic

2 teaspoon chopped ginger

½ cup chopped green onion

2 teaspoon ghee (or oil of your choice) – divided

3 cup diced tofu

4 teaspoon curry powder

1 cup diced zucchini

2 cup chopped spinach

1 T cilantro

Salt and pepper

Melt ½ t. of the ghee in sauté pan. Stir in garlic, ginger and green onion. Sauté over med/low heat until soft and fragrant. Push to sides of pan, leaving ring in center. Add another ½ t. ghee, when melted add the tofu and stir, leaving garlic/ginger mixture around the outer rim of pan. Sprinkle curry powder on top of tofu. Cover and sauté for a couple minutes. Stir together. Push mixture to sides of pan, leaving another ring in center. Melt another ½ t. ghee and add zucchini, cover and simmer another couple minutes. Push mixture to sides of pan, leaving ring in center. Melt last ½ t. of ghee and add spinach. Cover and simmer 1 or 2 minutes. Sprinkle with cilantro, stir and serve. Add salt and pepper to ginger, garlic, green onion stage at begging and/or before serving.

Serves 2 hearty helpings
